Txakoli (pronounced chah-co-lee) wines from Spain's Basque region are unfussy thirst-quenchers meant to be consumed within a year of bottling. They are nearly always very slightly fizzy and have a pale green color.
Typical flavors are pear and grapefruit and you'd be hard-pressed to find anything more refreshing to drink than Txakoli on a hot day. Give this a good chill, and for dramatic effect, pour from high above the glass for the maximum number of bubbles. Serve with tapas, salty snacks, or just by itself as an aperitif.
100% Hondarrabi Zuri. Serve very cold cold.
