Pais, otherwise known by the name Mission, was the very first European grape variety planted in the New World. As the name implies, Mission was first planted by Spanish priests sent to North and South America in the early 1500s (it was the first grape planted in California as well).
Although better known varieties like Cabernet Sauvignon and Chardonnay would come to dominate Chilean vineyard plantings, little pockets of Pais remained, often up in the hills where the vines were tended by local farmers. These farmers in turn made wine for family and friends, and the style of Chilean wine called "Pipeño" resulted.
Pipeños are really just Pais-based local country wines, but they have gained a much larger following, especially in the US, as consumers have sought out value as well as refreshing reds that pair with a wide variety of foods.
The example from El Mismo, like many Pipeños, should be served chilled. Note the 1-liter size that is perfect for casual Summer meals in warm weather.
