This is one of the two greatest American Sauvignon Blancs I have ever tasted (the other being Spottswoode). This is so complex and finely crafted it almost has to be tasted to be believed. Cymbal is the Sauvignon Blanc that is made as part of the "Long Shadows" project, where famous winemakers the world over make serious wines from some of Washington State's best vineyard sites.
Exotic fruits, fresh grass, and refreshing acidity. It was almost a pity that a number of really lovely wines were poured after this at a recent a tasting. They didn't stand much of a chance after the Cymbal.
100% Sauvignon Blanc. Serve cool.
