Assyrtiko is the great white grape variety of Greece. It's anyone's guess how long the grape has been cultivated on the island of Santorini, or in this case Crete, but we are certainly talking about at least 2,500 years and probably more.

If you've been to Greece you may well have tasted Assyrtiko. The grape lends itself to wonderfully minerally wines with refreshing acidity, and this example from the Lyrarakis winery fits the bill. 

"If it grows together it goes together", so try with grilled fish, feta, or light tomato based pastas. Of course, no one will know if you opt for carryout from Stella's or Pegasus. If you like minerally whites, then Assyrtiko really needs to be part of your repertoire. 100% Assyrtiko. Serve very cold.
